The Cobb Cooker is a pretty handy device to have around while vanning. I tested it out with a couple of recipes… and it went pretty good.

Pizza
Homemade pizza beats take away hands down
1 pizza base
1 sachet of tomato paste
Heaps of grated cheese
1 block of feta cheese
1 sweet potato
100g of ham
3 large mushrooms
100g of semi-dried tomatoes
1 green capsicum
Prepare your Cobb Cooker as per the instruction booklet. I used the Cobb Grill fitting to cook my pizza.
Remove the grill from the Cobb and grease it. Place your pizza base on top of it and smear the base with tomato paste. Then sprinkle some grated cheese over it. Peel the sweet potato and slice it finely. Boil it in some water till it is slightly soft. While it is boiling, chop the feta, ham, mushrooms, semi-dried tomatoes and capsicum.
Drain the sweet potato and place it evenly over the cheese. Then spread all the other ingredients over the top.
Lastly, sprinkle some more grated cheese over your massive pizza and return the grill (with the pizza on it) to the heated Cobb, pop on the lid and just wait for it to cook!
Jaffa Pikelets
Chocolate and orange are a perfect flavour combination
1 container of shake-a-pancake (see the back of packet for any extra ingredients – usually just water)
3 heaped teaspoons of cocoa powder
1 orange
Apricot jam
1 container of dolloping cream
Prepare your Cobb Cooker as per the instruction booklet. I used the Cobb Pan fitting to cook my pikelets.
Open the shake-a-pancake bottle and add the cocoa powder to it. Close the lid and shake the powder mix till the cocoa powder is dispersed evenly.
Different brands of shake-a-pancake require different amounts of water to be added. Add the water and shake vigorously until the mix is combined.
Grease the pan and pour small amounts of the mix onto the pan. Wait till the bubbles start to pop on the pikelet, then turn them with an egg flip.
Once cooked, smear them with apricot jam and stack them. Cut up and orange and place it on top of the stack and finish it off with a generous blob of dolloping cream.
