Crumpets are delicious in winter, especially for morning tea. They are great dripping with butter and golden syrup, but I’ve found another tasty topping.

While your crumpets are toasting, combine some flaked almonds and honey in a small saucepan and stir it over a low heat. Eventually it will combine and go warm and runny. Spread your crumpets with butter, then pour on the honey mix.

With the onset of winter, it’s time for a dish to keep you nice and warm – bean nachos. You need a tin of kidney beans, grated cheese, corn chips, salsa, avocado and sour cream. Heat the beans in the microwave, then get your hands on a baking dish. Put several layers of chips, salsa and cheese in the baking dish, before making sure to top it all off with more cheese. Bake it in a moderate oven until the cheese has well and truly melted, and then serve with plenty of avocado and sour cream.

Now the cold weather has set in, my housemate (who is a really good cook) has been making us some lovely curries and she has been nice enough to give me the recipe for my favourite one.

Chicken Panange Curry

You need:

  • Chicken breast
  • Volcom Panange Curry Paste.
  • 1 can of coconut milk
  • 3 tablespoons of fish sauce
  • 2 tablespoons of sugar
  • Chopped ginger and garlic
  • And then whatever veggies you like – I recommend snow peas, pumpkin, capsicum and bok choy.

Cut up and brown veggies in a fry pan and set aside.
Dice chicken breast and brown in a pan with two tablespoons of curry paste. Add fish sauce, sugar, chopped ginger and garlic and stir. Add coconut milk and leave to simmer for 15 minutes or so.

Serve with Jasmine rice and some shallots on top.
